



Panzano is 35 kilometers from both Florence and Siena on the 222 highway between Florence and Siena, the strada di vino. It's only 3 kilometers up the hill from Greve in Chianti.

 nother great reason to visit Panzano in Chianti! Enoteca Baldi! This little wine bar has an incredible selection of wines to enjoy by the glass in the shop. They will be glad to help you choose the best wines from the region to enjoy here or to take home with you. And there are some incredible wines at here -- Fontodi, La Massa, and Villa Cafaggio. There's a great menu for a light lunch or a snack. The food is prepared by Mimmo Baldi, a chef born in Naples, and his wife Arianna.
Mimmo was kind enough to share two of his signature dishes with us plus the recipe for an incredible pasta. These are guidelines, not recipes. Usually, no precise measurements are given in Italy.

Pesce all'Acqua Pazza,
or Fish in Crazy Water
Clean a whole small fish (trout is good) and place some fresh oregano, rosemary, and a peeled garlic clove in the belly. Lightly sauté on both sides in a skillet and splash with white wine. Add crushed cherry tomatoes and a few fresh mussels. Let cook for another couple of minutes and then place in a baking dish and bake at 350 degrees F. for 20 minutes. Serve with all its cooking liquids. Squisito!

Caprese,
or Chocolate Almond Cake from the Isle of Capri
4 eggs
250 grams butter
300 grams sugar
200 ground almonds
100 grams ground bread sticks
(grissini, the really thin ones from Torino)
75 grams bittersweet cocoa powder
Cream the butter and sugar together, add the almonds and ground bread sticks. Separate the yolks from the whites and stir the yolks into the cake mixture. Whip the whites until almost stiff. Fold in. Place the batter in a buttered 12-inch cake pan and bake at 350 degrees F. until done, or about 25 minutes. If you use a large cake pan you will have a lower cake. Use a smaller cake pan for a higher cake. The higher the cake, the longer it will cook.
