Fresh Garlic...aglio fresco

Fresh garlic looks like green onions, but has the most delicate smell and taste of garlic. It can be used cooked or raw. The new red onions are also incredibly sweet! I live in Certaldo, which is famous for the red onion that it is on our city banner! However, one of the best red onions comes from Tropea in southern Italy! Fabulous raw in salads or roasted to caramelize! I do them Agrodolce, sweet and sour, a traditional recipe that is made mostly with the tiny cipollini onions.
