Peas...piselli In Florence if a recipe is called alla Fiorentina, or Florentine style, do not expect spinach, but peas! Florentines love peas and what is more spring like than peas. I am very lucky because I can buy my fresh peas already shelled, encouraging me to cook them often. Germana Conti of the famous Conti merchants in the Mercato Centrale gave me my favorite recipe for peas. She is a future chef of the month, so watch for the recipe!
